About 30 minutes northwest of Stratford, you’ll find Gunn's Hill Artisan Cheese. It is totally worth the trek. Meet the cheesemaker, owner, and operator, Shep Ysselstein. He’s been honing his skills for years, with training in the USA, BC, and most recently, in Switzerland (homeland to his grandparents).
He shared “Although all of my cheeses are unique, I think you can really taste the Swiss influence come through. That’s from the techniques and recipes I learned while abroad.” Shep grew up on the Holstein dairy farm right next door to the Gunn’s Hill workshop and retail store. His brother and father continue to run the herd on that property, which is the source of Shep’s milk.
Shep’s artisan products have won numerous prizes over the years, including the prestigious Canadian Cheese Grand Prix, for his Five Brothers cheese (named for Shep and his four older siblings) his Handeck cheese won another Grand Prix in the Farmstead category. He now makes about 15 different styles and varieties of cheese, including some “reserve” categories at different times of the year. Especially cool: make a reservation to tour the cheesemaking workshop, which includes a tasting of Shep’s prize-winning creations.
